Is the XEON technology noticeable, for example, a G3600 compared to an I5 sandy bridge or an I7, in terms of data processing? -
If you are referring to performance: no. The difference usually comes in the aspect of voltage/consumption/heat and their ability to be mounted on multisocket boards.
PD: Unless your 'data processing' has some peculiarity (normally in scientific applications) that are optimized for some instruction specific to the Xeon range, although I do not know if they really have any set of specific instructions (leaving aside AES, TET…)

No, it is not specific at all. I am interested in setting up a server for a small business in the most cost-effective way possible. Therefore, seeing that the comparisons between the Sandy Bridge system and the Xeon were equal and the price is much higher, I did not know what to do...
