PB Asus ROG MAXIMUS IX EXTREME, what components do we use to spice it up?

Well, after a very long season out of the hardware scene, using laptops to work and not having assembled a PC in years, I return to HardLimit to see if I can catch up since I have a new project...
I have in my hands an Asus ROG MAXIMUS IX EXTREME motherboard that for me looks like a "cucumber" but with my knowledge being at a minimum, it intimidates me a bit to be honest and I don't know where to start jajjaajja
I need your opinions to catch up and know what to add to it so that its performance is optimal, there will be time to get more out of it, the first thing is to get it running and if later we have to change components then it will be done.
The project focuses on a desktop that will be used for driving simulators like Projects Cars, Asseto Corse, etc... but it's clear that if 15 years ago I was already into CounterStrike, then we'll also indulge in some vice
So, having given you the background, let's see what you have to say so I can take notes and get the tower up and running as soon as possible

I already have the motherboard, so there is no option to change the processor to AMD,
I have to follow the socket format that is already on the market, I have not yet had time to investigate and I do not know if the motherboard will support the new generations of processors that I have read about coming
So starting from this I have to mount a processor for Intel 7th generation LGA1151 socket
