Drawing of my network

Hello, at my workplace we have a "hardware" structure that is a bit larger than what I am used to seeing.
We have 2 floors and on each floor there are about 15 offices, where each office has its own switch from these "cheap" conceptronic asus or similar, and from there a cable goes directly to the server room where there is a cabinet.
In the connection cabinet we have 6 HP 24-port switches.
I think we have some kind of bottleneck but I don't know how to locate it since we have more than 30 switches spread throughout the company... and my question is if you know if there is any kind of software that can draw me a picture of the "network", or how would you approach this problem?

Cisco's Packet Tracer can be used for drawing.
Regarding the problem, in which notes do you notice a bottleneck? Only when accessing the internet? Or also in the local network?
Try to give more data.

We noticed it in that we have an ERP that at certain times gets stuck (it's not from sql server or from the machine itself, we've been monitoring that for a long time)
And we also noticed that we have a couple of VOIP phones and we noticed that we are talking to someone and it gets cut off "x" times during the conversation, that's where our "fears" come from because we might have a bottleneck.
When I said that the map was drawn for me, I meant "automatically", that is, starting from the reading of the network... the program made me a map... I wonder if it exists.
