Will the change from GTX295 to GT 640 be very traumatic?

Well, the GT640 will probably be insufficient for BF3, but with a second-hand GTX460, which I see shouldn't cost more than 60-70€, you could manage very well.
Anyway, if it helps, my brother is playing now with an 8800GTS 640MB (G80) and visually I don't see it as bad... he doesn't complain since he's not used to powerful computers xD
Anyway, he had an 8800GT before (mine previously) and the poor thing died... and I had nothing else on hand to leave him... for now, but I'll pass on the GTX460 soon.Anyway, if you're not very picky, visually speaking, the GT640 will do the trick, but I wouldn't opt for anything less than a GTX460 ;D

As they told you, nothing less than a 460 GTX. I would go for a 560 GTX Ti if possible. But I wouldn't build anything less than a 460 GTX to be honest. I had a 4770 which is similar in performance to an 8800GT and I couldn't run it well even at 1024... with full servers it would crash if you encountered an enemy within a meter... so at Full HD... the graphics card would probably explode :ugly:

According to this comparison, the 295 has much more raw power than the 560TI, but I suppose it will be much more optimized, especially for having dx11, which the 295 lacked.
We'll see when it arrives how well it runs on OSX.

Don't trust those charts. It's best to go to the tests:
The 2950 GTX had a lot of raw power, but nowadays I would prefer a 560 GTX TI like yours, because of consumption, because it doesn't perform that badly, because of temperatures, because of drivers… In fact, with current games, the 560 should perform even better, and over time that gap will increase. The 295 was a very good graphics card, but today, despite maintaining its type, there are more efficient graphics cards that perform the same or better.
