I also have a 7990.
With GTA I noticed that one of the two Malta cores reached almost 100º and the cooling of the whole system was practically saturated.
To try to correct it, I activated the Overdrive technology in the Catalyst drivers and lowered the 'power limit' to -14%. From there, one core usually stays above 85º and the other at 75º and I can continue playing at a resolution of 6124x1080. You can adjust the overdrive values to your liking, in the end I have left the limit at -11%, with a little overclock.
It all depends on the cooling set you have, but I think modifying that value could help you.

In duales it is normal to have higher temperatures, what you can do when playing is force vsync so that it only gives the necessary frames and make a fan profile with MSI afterburner, which speeds up the fan earlier, for example when passing from 65º the fan goes up, because the factory profiles are very conservative and only go up when passing from 80º, so then it is more difficult to cool it down.

@WarGeek: La verdad que con Sandy Bridge y un Overclock moderado no necesitas ni cooler aftermarke ni tampoco subir voltajes, eso es una de las cosas buenas de esta línea de procesadores. (Suponiendo que no tas en un desierto) Hacer OC no es tan difícil, podes empezar con poner el voltaje en manual y lo pones en 1.2 o 1.25 y empezas a subir el multiplicador uno por uno haciendo pruebas de Prime 95 de al menos 15 minutos. Cuando llegues a 3.8 o 4.0Ghz (que seria lo máximo que podrias llegar con el cooler stock), entonces, si no has tenido problemas, podes pasarle una prueba larga de 2-3 Horas, recorda siempre estar pendiente de las temps. Te recomiendo Hardware Monitor o Aida64. Si queres mas ayuda con gusto, pasate por mi perfil y ahí tengo mi FB, msn, o skype. Por cierto tengo un 2500K en 4.6Ghz, con todos los estados de energía activados (me gusta el rendimiento, pero también me gusta el silencio y ahorro de energia).
