Doubt with RAID

Good morning
I have an HP Proliant G7 server with 3 hard drives.
500GB and 2x250GB

I have CentOS installed on the 500GB hard drive and my goal was to create a RAID on the other hard drive, but upon discovering that I had two of 250GB I'm not sure if I can create it.

Can someone inform me?

Raid 0 or raid 1. You can't do anything more than that. If you use the 500gb one, what will happen is that you will lose 250gb. If you are looking for speed, Raid0. If you want data security, Raid1.
