I agree, to play decently the first thing you should look for is "balance" between components and the second is "good graphics (in proportion to the equipment)".
An 1080TI, or some RTX2080/TI... I wouldn't go below that thinking about building a "big PC for gaming". Then I would balance the motherboard, memory, processor, SSD, etc.
For example, I prefer a "normal" SSD over an NVME if with the savings I can invest in a GPU, for example. From personal experience I can tell you that you don't notice a substantial change in performance but you do in your wallet.
It's true that in raw performance maybe Intel has a little more punch... but the price difference doesn't justify that little extra performance.
I have a 2600X, it works great for me although maybe I'm less demanding. But if you want you can put a 2700X and within a reasonable time you could upgrade to a Ryzen 3000... Anyway, even if you opt for Intel I insist that you invest in a GPU and don't spend a fortune on a mega monitor when there are many excellent monitors for less money (or are you a monitor perfectionist?).
